The Butterfly Pea Flower contains a high concentration of anthocyanins. These are the same natural antioxidants found in blueberries. In the world of chemistry, anthocyanins act as a natural pH indicator, meaning they change their physical structur; and therefore their color-based on the acidity of the liquid.

The Transformation Breakdown:

Deep Blue: The tea’s natural state in neutral water (pH of around 7).

Royal Purple: Adding a mild acid-like lemon lowers the pH, shifting the molecules to reflect purple.

Bright Pink: High acidity (more citrus) drops the pH further for an electric pink glow.

Does Temperature Matter?
